This intensive course will explore the foundational mother sauces of classic French cuisine. Although there are various opinions on which sauces qualify as mother sauces, we will concentrate on five essential ones: Sauce BƩchamel, Sauce VeloutƩ, Sauce Espagnole, Sauce Hollandaise, and Sauce Mayonnaise. Learn how to master each of these sauces as well as using thickening techniques including roux, emulsions, and reduction. You will also learn a bonus vinaigrette and pan sauce.
