Mother Sauces with Chef Mark

 

This intensive course will explore the foundational mother sauces of classic French cuisine. Although there are various schools of thought on which sauces qualify as mother sauces, this course will concentrate on five essential ones: Béchamel, Velouté, Espagnole, Hollandaise, and Mayonnaise.

We'll also throw in a bonus of a proper Vinaigrette and a quick and delicious Pan Sauce.

Learn about these fundamental sauces and the techniques associated with mastering each.

  • Creating and thickening with a roux, an how to make Sauce Béchamel, Sauce Velouté and Sauce Espagnole.
  • Creating and thickening with temporary and permanent emulsion and how to make a vinaigrette, Sauce Mayonnaise and Sauce Hollandaise.
  • Thickening with reduction, and how to make a quick and delicious Pan Sauce.
